Brandon Rivera Earns Honors at Professional Culinary Competition

Brandon Rivera of Bay Shore earned a Silver medal in Student Contemporary Hot Food at the 18th Annual ACF Chefs and Cooks of the Catskill Mountains October Competition at SUNY Delhi on October 15-16.

Rivera was one of seven SUNY Delhi students, faculty and alumni who won more than half of the medals awarded at the professional competition. Rivera is pursuing a bachelor's degree in Culinary Arts at SUNY Delhi.

Four prize gift baskets featuring Campbell's and Pepperidge Farm products were generously donated by Lead Judge and SUNY Delhi alumnus Christopher A. Tanner.

Regarded as one of the best in the country by many industry professionals, Delhi's Culinary Arts program is one of the most decorated in New York State. The college's hot food team has won 11 American Culinary Federation State Championships, six ACF Northeastern Regional Championships, and two national titles. Delhi also claims the 2015 Student Chef of the Year and the 2015 Ment'or Young Chef titles and won its first international culinary competition this summer in Costa Rica.

SUNY Delhi's Culinary Arts program offers students a firm foundation in which to start their careers as culinary professionals. The college's culinary labs progress through basic skills dealing with Garde Manger, baking, sauces, stocks, etc., to the capstone course, Signatures by Candlelight, a full service fine dining restaurant that is open to the public and operated completely by SUNY Delhi students. In addition to the core classes, there are numerous culinary electives offered to help each student customize their portfolio of education. Depending on their interest or direction in the field, students can choose from electives such as advanced meat cutting, culinary competition, advanced pastries and confections and culinary sculpting, which uses 300 pound ice blocks made on campus by culinary students in the college's own ice sculpting lab.
